Pumpkin Spelt Muffins with Peanuts and Ginger

These spekulatius-spiced pumpkin muffins are moist and fresh in an airtight container for a few days, and freeze fairly well. They are the perfect treat for an autumn afternoon. If you don’t have spekulatius spice, use pumpkin pie spice or just cinnamon instead.




  • 100 g Whole grain spelt, ground
  • 120 g Refined spelt flour
  • 120 g Raw sugar
  • 1 tsp Baking soda
  • 1/3 tsp Salt
  • 220 g Roasted pumpkin puree
  • 2 tsp Spekulatius spice
  • 85 ml Coconut oil, melted
  • 60 ml Coconut milk
  • 50 g Candied ginger, chopped
  • 150 g Salted peanuts
  • Caramel, optional



  1. Preheat the oven 190C/375F. Line 12-14 muffin cups with paper liners. Sift ground whole grain spelt flour, refined spelt flour, sugar, baking soda and salt together in a mixing bowl.
  2. In another bowl, whisk together the roasted pumpkin puree, spekulatius spices, coconut oil, and coconut milk until well combined.
  3. Add the flour mixture into the pumpkin mixture and mix until just incorporated. Do not overmix or muffins will be tough. Fold in chopped candied ginger and 100 grams of salted peanuts.
  4. Divide the batter into prepared muffin cups. Sprinkle the tops with some peanuts. Bake on the upper oven rack for 25 to 30 minutes until nicely golden brown. Drizzle with caramel sauce if desired, and serve warm.

Stuffed Roasted Figs with Goat Cheese and Pistachios

A stylish seasonal dish made from fresh ripe figs, creamy mild Chavroux, and crunchy pistachios, served with a green pepper grape syrup. You can serve this as an appetizer, a snack or even as a light dessert.


Stuffed Roasted Figs with Goat Cheese and Pistachios

  • 250 ml Grape juice
  • 5 tsp Honey
  • 1/2 tsp Green peppercorns
  • Fresh thyme
  • 30 g Pistachio nuts
  • 100 g Fresh goat cheese
  • Freshly ground black pepper
  • 3 Fresh figs


  1. Place grape juice and 3 teaspoons of honey in a saucepan. Cook the mixture on high heat until it becomes syrupy, about 15 minutes.
  2. Preheat the oven to 220C/430F. Crush the green peppercorns with a mortar and pestle and add to the grape syrup. Finely chop the pistachios.
  3. In a bowl, stir together fresh goat cheese, 2 teaspoons of honey, thyme leaves, and freshly ground black pepper.
  4. Slice each fig in half lengthwise. Make a depression in the middle with the back of a teaspoon. Fill the depression with goat cheese filling. Place them in a baking dish. Switch the oven function to grill and roast the filled fig halves for 6-8 minutes until the goat cheese is lightly browned. Serve with the grape syrup.

Overnight Yogurt Sunflower Seed Bread Rolls

This overnight bread, prepared with a mix of wholewheat and bread flours and 100% yogurt, has a crunchy crust and tender crumb with complex flavour and a beloved delicious sour tang due to the long, slow overnight fermentation.


Overnight Yogurt Sunflower Seed Bread Rolls

  • 400 g Plain yogurt
  • 3 g Fresh yeast
  • 150 g Wholewheat grain, ground
  • 230 g Bread flour
  • 8-10 g Sea salt
  • Sunflower seeds


  1. Before you go to bed, dissolve fresh yeast with the yogurt in the mixing bowl of your stand mixer, then add in remaining ingredients, except sunflower seeds. Stir first on slow speed until the dough comes together, then increase the speed and knead until it’s smooth. Cover with plastic film and proof overnight or up to 12 hours at the room temperature.
  2. Next morning roll dough on a well-floured work surface to 40 x 40 cm square. Fold each side in to meet in the middle, so you have a 20 x 20 cm square. Cut into 9 pieces. Brush the surface with water and coat with sunflower seeds. Place them on a baking tray lined with parchment paper. Cover with a clean kitchen towel and proof for 60 minutes.
  3. Place a roasting tray at the bottom of the oven and preheat to 250C/500F. Put the bread in the hot oven and pour a cup of boiling water into the roasting tray. Close the oven door and bake for about 20 minutes.

Raw Energy Bars

Fruity, nutty, naturally sweet, these raw energy bars made from dried prunes, figs, nuts and cocoa powder are a delicious and healthy snack to keep up your energy between meals, or after a workout.


Raw Energy Bars

adapted from Just As Delish


  • 150 g Dried prunes, roughly chopped
  • 150 g Dried figs
  • 200 g Raw cashew nuts, chopped
  • 150 g Raw almonds
  • 20 g Cocoa powder
  • 35 g Ovaltine chocolate malt powder
  • A pinch of sea salt
  • 2 tbsp Homemade vanilla extract

  1. Line a 15x25-cm rectangular pan with a plastic film. Place chopped prunes, nuts, cocoa powder, Ovaltine chocolate malt powder and sea salt in a blender or food processor. Pulse a few times until all the ingredients come together.
  2. Add in homemade vanilla extract and pulse until it reaches a dry but moist dough consistency. Scrape the mixture into the lined pan, press evenly with a rubber spatula, and chill for about an hour before cutting into bars.

Mixed Seeds Light Rye Bread

Healthy and nutritious, a delicious rye spelt bread adapted from Brot backen-Köstliche Rezepte aus der guten alten Zeit©angiesrecipes, is strewn with a mix of flax, pumpkin and sunflower seeds and bursting with flavour.




  • 380 g Light rye flour
  • 380 g Refined spelt bread flour
  • 20 g Sea salt
  • 20 g Fresh yeast, crumbled
  • 2 tsp Honey
  • 100 ml Lukewarm water
  • 150 g Sourdough starter
  • 400 ml Buttermilk, at room temperature
  • 50 g Pumpkin seeds
  • 50 g Flax seeds
  • 50 g Sunflower seeds


  1. Mix light rye flour, spelt bread flour, and sea salt in a mixing bowl. Make a well in the center, and place the yeast, and honey in the well. Add in lukewarm water and a little flour from the sides of well. Stir the mixture until it resembles thick porridge. Cover with a kitchen towel and leave it aside for 15-20 minutes.
  2. Add in the sourdough and buttermilk. Stir until the dough comes together and pulls away from sides of bowl. Turn it out onto a lightly floured work surface and form the dough into a ball. Dust the ball of dough with some spelt flour and proof, covered with a kitchen towel, for 20 minutes.
  3. Push the pumpkin, flax, sunflower seeds into the dough and knead and knead the dough until the seeds are incorporated.
  4. Divide the dough into two portions and shape each into a round. Place them on a baking tray dusted with flour and proof, covered with a kitchen towel, for another 20 minutes. Preheat the oven to 220C/430F. Cut some decorative slashes on the top of bread.
  5. Bake the bread in the center of the hot oven for 15 minutes then reduce the oven temperature to 180C/350F and bake the bread a further 45 minutes. Remove from the oven and brush with water. Return the bread to the oven and bake for 5 more minutes until nicely golden brown and crusty.

Sweet Potato Salad with Baby Spinach and Feta

Nothing tastes fresher, happier and better than a spring salad just picked from your own garden or windowsill. Besides that, salad is a great way to increase your fruit and vegetable consumption.

Baby spinach is amazingly easy to grow, as seeds germinate in cool weather. I started mine outdoors in containers around the mid-April and 3-4 weeks later, they were ready for harvest.

The flavour of this salad sparkles with the subtle depth and bright note of acidity from Balsamic vinegar, its tartness tempered by the natural sweetness of tasty, low-calorie roasted orange sweet potatoes.




SaladDressing

  • 700 g Orange sweet potatoes, peeled and cut into slices
  • 2 tbsp Olive oil
  • Salt and black pepper
  • 100 g Baby spinach
  • 1 handful Almonds, toasted and chopped
  • 1 Small red onions, cut into thin wedges
  • 100 g Feta, crumbled

  • 3 tbsp Balsamic
  • 1 tbsp Olive oil
  • 2 tbsp Clear honey
  • 1 tbsp Wholegrain mustard
  • Salt and pepper

  1. Preheat a grill or broiler to medium-high. Place the potato slices, 2 tbsp olive oil, salt and pepper in a bowl. Toss well. Place them in a single layer on a baking sheet, and broil until they are nicely caramelised, 5 minutes on each side. Adjust the oven to the bake setting at the temperature 180C/350F. Cook for 15 minutes until they are fork tender.
  2. Toss baby spinach, toasted almonds, and red onions together and divide the mixture into two serving plates. Top with crumbled feta.
  3. Whisk the balsamic, olive oil, honey and mustard together. Season well. Pile sweet potato slices on top of the salad and drizzle with the dressing.

A sweet, salty, crunchy bar cookie topped with roasted peanuts. Honey and roasted peanuts, a decadent bliss and a bewitching flavour combination that brings out the best in one other. Irresistible and thoroughly satisfying!


Honey Peanut Spelt Bars

  • 40 g Unsalted toasted peanuts
  • 100 g Granulated sugar
  • 320 g Spelt pastry flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Table salt
  • 150 g Cold butter, cut into 1/2-inch pieces
  • 1 Large egg, lightly beaten

  • 120 g Light brown sugar
  • 80 g Unsalted butter
  • 4 tbsp Honey
  • 1/2 tsp Table salt
  • 2 tbsp Evaporated milk, at room temperature
  • 350 g Salted and roasted peanuts


  1. Position a rack in the center of the oven and heat the oven to 350°F. Spray a 9x13-inch baking pan with cooking spray and line the bottom with parchment.
  2. Finely grind peanuts and sugar. Place them in a large mixing bowl together spelt pastry flour, baking powder, and salt. Whisk to combine. Cut in the butter and rub with your fingertips until the mixture resembles breadcrumbs. Add the lightly beaten egg and mix just until the dough begins to gather into large clumps.
  3. Using your fingertips, press the dough into the bottom of the prepared pan and about 1 inch up the sides to form a 1/4-inch-thick side crust. Using the tines of a fork, dock the crust evenly all over.
  4. Bake until light golden brown on the edges and the center looks dry, 15 to 20 minutes. Cool the crust on a rack.
  5. At the same time, bring the brown sugar, butter, honey, and salt to a boil in a medium saucepan over medium-high heat, stirring often. Slowly and carefully add the evaporated milk and return to a boil. Remove from the heat and carefully add the nuts, stirring to coat.
  6. Pour the nut mixture over the crust and spread evenly with a spatula. Tilt the pan to help spread the liquid to the edges and corners. Bake until the topping has just started to bubble slowly in the center, about 20 minutes.
  7. Let cool on a wire rack for 10 minutes and then run a knife around the inside edge of the pan to loosen the crust from the sides. Let the bars cool completely. Cut into 16 bars. The cookies will keep in an airtight container at room temperature for 3 to 5 days.

Nutella Spelt Cookies with Pistachios

If you are a fan of Nutella or chocolate, those rich, crispy, chocolatey and nutty cookies are sure a real treat. If you can't find spelt, just use plain wheat flour instead.




  • 270 g Spelt pastry flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 100 g Butter, softened
  • 150 g Sugar
  • 2 Eggs, at room temperature
  • 320 g Nutella
  • 1 tbsp Coffee liquor
  • 50 g Pistachios, chopped


  1. Whisk together the spelt flour, baking soda and salt in a mixing bowl.
  2. Cream the softened butter and sugar on medium speed until light and fluffy. Add eggs, one at a time, until completely incorporated. Add in nutella and coffee liquor.
  3. Sift the flour mixture into the nutella mixture. Mix until just incorporated. Cover with a plastic wrap and chill at least 4 hours or overnight.
  4. Line two baking sheets with parchment paper. Preheat the oven to 175C/350F. Shape the cookie dough into balls and roll in the chopped pistachios. Place them on the prepared baking sheets, leaving about 1-inch between cookies. Bake for 15 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
